Salted Caramel and Chocolate Chip Oatmeal Cookies

There is just something wonderful about a warm, gooey oatmeal chocolate chip cookie.  This recipe is one of our longtime family favorites.  Last year, I discovered Hershey Salted Caramel chips, and they took this recipe from great to AMAZING.  I’m not sure if the caramel chips are only around during the holidays, but you probably want to stock up on them now just in case.  Then make these cookies because they are really awesome.

For this recipe, I decided to make my very first Tasty-style video.  Love how it turned out!  If you like it too, share it with your friends! 🙂

Salted Caramel and Chocolate Chip Oatmeal Cookies

1/2 cup butter (softened)

1/2 cup margarine

1 cup sugar

1 cup brown sugar

2 eggs

1 tsp vanilla

1 tsp salt

1 tsp baking soda

2 cups flour

3 cups oatmeal

3/4 cup salted caramel chips

3/4 cup chocolate chips

Cream together butter, margarine, and sugars.  Add eggs and vanilla.  Mix in salt and baking soda, then add flour.  I live at a higher altitude so I use 2 cups of flour.  If you live at a lower altitude, you might want to reduce it to 1 3/4 cups.  Mix in oatmeal, then caramel and chocolate chips.  If you like to add coconut and/or nuts to oatmeal cookies, add 1/2 cup each at this time.  I personally don’t so I leave them out. 🙂

Form 1 Tbsp. dough into a ball and place on cookie sheet.  Bake at 350 degrees for 8-10 minutes (I bake my cookies for 9).  Let them cool on pan for 2 minutes, then remove from pan and finish cooling on wire rack.  Enjoy!

  4. I love oatmeal chocolate chip cookies but have never tried the salted caramel chips. I’ll have to try that sometime. Loved the video. Great way to walk us through the recipe. Do you ever toast your oatmeal before you add it to the cookies? I’ve done this in the past and I think it adds a rich nuttiness to the cookie.
