Salted Caramel and Chocolate Chip Oatmeal Cookies

Ingredients
  • ½ cup butter (softened)
  • ½ cup margarine
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups flour
  • 3 cups oatmeal
  • ¾ cup salted caramel chips
  • ¾ cup chocolate chips
  • Optional: ½ cup coconut and/or nuts
Instructions
  1. Cream together butter, margarine, and sugars.
  2. Add eggs and vanilla.
  3. Mix in salt and baking soda, then add flour.  I live at a higher altitude so I use 2 cups of flour.  If you live at a lower altitude, you might want to reduce it to 1¾ cups.
  4. Mix in oatmeal, then caramel and chocolate chips.  If you like to add coconut and/or nuts to oatmeal cookies, add ½ cup each at this time.
  5. Form 1 Tbsp. dough into a ball and place on cookie sheet.
  6. Bake at 350 degrees for 8-10 minutes (I bake my cookies for 9).
  7. Let them cool on pan for 2 minutes, then remove from pan and finish cooling on wire rack.
