Mix in salt and baking soda, then add flour. I live at a higher altitude so I use 2 cups of flour. If you live at a lower altitude, you might want to reduce it to 1¾ cups.
Mix in oatmeal, then caramel and chocolate chips. If you like to add coconut and/or nuts to oatmeal cookies, add ½ cup each at this time.
Form 1 Tbsp. dough into a ball and place on cookie sheet.
Bake at 350 degrees for 8-10 minutes (I bake my cookies for 9).
Let them cool on pan for 2 minutes, then remove from pan and finish cooling on wire rack.
