Crockpot Roast and Veggies

Ingredients
  • 2-3 lb. Beef Roast
  • 1 lb. Potatoes, baby or diced
  • 1 lb. Baby carrots
  • 1 can Golden Mushroom soup
  • 1 envelope Onion soup mix
  • 3 cups water, divided
  • ¼ cup corn starch
Instructions
  1. Spray crockpot with cooking spray. Add roast and vegetables.
  2. Sprinkle with onion soup mix, then add Golden soup and 2 cans of water (2¾ cups).
  3. Stir slightly and cover. Cook on low heat for 8-9 hours.
  4. When done, remove roast from crockpot and allow to rest for 5-10 minutes.
  5. Slice with knife and drizzle with ⅓ cup of beef liquid.
  6. Remove vegetables from crockpot and place in serving bowl.
  7. To make gravy: Pour liquid from crockpot into a saucepan. Mix ¼ cup corn starch with ¼ cup water in a cup. Slowly pour into beef liquid while whisking. Continue to stir with whisk while mixture boils on medium for 1-2 minutes. Remove from heat when thickened to your liking.
  8. Dish up and enjoy!
