Sweet Potato Souffle

- 29 oz. can sweet potatoes (3 cups mashed)
- 3 Tbsp. butter or margarine, softened
- 1 tsp. vanilla
- ¼ cup milk
- ½ cup sugar
- ½ tsp. salt
- 2 eggs
- Topping
- ⅔ cup brown sugar
- ½ cup flour
- ½ cup walnuts
- 3 Tbsp. butter
- Mash sweet potatoes and butter.
- Add other ingredients and mix together.
- Pour into a 2-quart baking dish. I use a round dish, but an 8x8 or 9x9 pan would work too.
- Mix together topping and sprinkle on top.
- Bake at 350 for 30 minutes.
