Sweet Potato Souffle

Ingredients
  • 29 oz. can sweet potatoes (3 cups mashed)
  • 3 Tbsp. butter or margarine, softened
  • 1 tsp. vanilla
  • ¼ cup milk
  • ½ cup sugar
  • ½ tsp. salt
  • 2 eggs
  • Topping
  • ⅔ cup brown sugar
  • ½ cup flour
  • ½ cup walnuts
  • 3 Tbsp. butter
Instructions
  1. Mash sweet potatoes and butter.
  2. Add other ingredients and mix together.
  3. Pour into a 2-quart baking dish. I use a round dish, but an 8x8 or 9x9 pan would work too.
  4. Mix together topping and sprinkle on top.
  5. Bake at 350 for 30 minutes.
